Yellow or red onion (lat. Allium cepa) is a plant from the Amaryllidaceae family. Onion has only 42 kcal per 100 g, with most of the energy coming from carbohydrates (92%). The average chemical composition of onion is: moisture 91%, proteins 1.20%, fats 0.10%, vitamin C 6 mg/100 g.
Red onion is rich in ingredients beneficial for heart health. Onion has long been known and recognized as a natural antibiotic and antipyretic. These properties are the result of the synergistic action of vitamin C, quercetin and isothiocyanates. Onion is therefore especially desirable during cold and flu season. It belongs to the oldest vegetable crops. Its smell is aromatic and its taste strong, more or less pungent. The taste of onion depends on the climate in which it grows - the milder the climate, the sweeter the onion.
Onion varieties differ by color, size and taste. In spring and summer there is a variety of young onion with a sweet or medium-strong taste. In autumn, onions with larger bulbs are harvested and dried, and after a few months they have a dry and easily breakable peel. The names come from their color - white, yellow (red) and purple. Shallot is also included, a variety with smaller bulbs.
Onion originates from Asia and the Middle East, and has been cultivated for more than 5,000 years. Egyptians especially valued onions by paying workers who built the pyramids with them, while pharaohs (e.g. Tutankhamun) placed onions in tombs to serve them in the afterlife.
In India, as early as the 6th century, onion was used not only in cooking but also for treatment. The popularity of onion was also maintained among the ancient Greeks and Romans, and it was especially used by poorer people as an addition to their simple meals.
In the Middle Ages, it was an indispensable vegetable in many European countries and was even served as part of a healthy breakfast. Christopher Columbus spread onion to the west.
